Easy and Delicious Chia Pudding

I normally don’t post about food or recipes, simply because I really don’t like to cook and find it a bit of a hassle. I know how you feel mom, sorry if I ever complained about dinner! And let’s be real here, there are amazing food bloggers out there who can make anything look good with their photography and streamers/glitter in the background. But today I have this super easy and healthy (healthy enough that it’s not considered not junk food, haha) chia pudding that you can make in minutes. The chia seeds act as a detox and pull all the junk out of your system. It makes a great breakfast or a quick snack. And it actually tastes good and is quite addictive! :) Here we go.

Makes 2 servings
You will need:

1 cup of milk and 1 cup of water, you can use only milk or only water, depends on what you have and personal preference on thickness
1 heaping tablespoon of peanut butter (or almond butter for an even healthier option)
1 teaspoon of cinnamon powder
1/2 teaspoon of vanilla extract
1 1/2 tablespoon of honey or syrup
3/4 cup of chia seeds
1 cup of raisins
fresh or frozen fruit of your choice

Blend the milk, water, peanut butter, cinnamon, vanilla, and honey together until well mixed. This makes a really yummy spiced almond milk kind of drink.

Pour the milk into a large bowl and stir in the chia seeds and raisins. Let this sit for a couple of hours until the seeds have soaked up the milk. I suggest making this after dinner or before going to bed and letting it sit in the fridge overnight so the milk really sinks in and the seeds are all puffed up.

Top it off with some fresh or frozen fruit in the morning and you’re good to go! I love adding kiwis and frozen mango. It’s really delicious and healthy. Try it out and let me know what you think!
